 2 packages (3 ounces each) of beef ramen noodles

 2 tablespoons of cornstarch

 2 cups of beef broth, divided

 1 pound of beef top sirloin steak, cut into thin strips

 2 tablespoons of canola oil

 2 tablespoons of reduced-sodium soy sauce

 2 cans (14 ounces each) of whole baby corn, rinsed and drained

 2 cups of fresh broccoli florets

 1 cup of diced sweet red pepper

 1 cup of shredded carrots

 4 green onions, cut into 1-inch pieces

 1/2 cup of unsalted peanuts
